Smoking hot business in Clunbury wins top accolade


THE Organic Smokehouse in Clunbury has lifted the Rural Enterprise Award in the Countryside Alliance’s fifth annual regional business awards.

Established eight years ago and with five staff, the Organic Smokehouse carries on the centuries old tradition of smoking meat and fish in a chimney above an open fire.

It utilises the long established draft method, with air-dried natural fallen oak as the fuel.

The company claims to be the only firm that ‘chimney smokes’ on a commercial basis and the only dedicated organic production smokehouse in the UK. It is an international business which has won a series of awards.

“The Organic Smokehouse is really not what you would expect. As you drive into the muddy farmyard, you wouldn’t know that there was an international business anywhere in the vicinity,” said judge Clare Rowson. “Then a charming, energetic man is there to great you and is totally inspirational. The man is the brains behind the business, Michael Leviseur.

“Whilst working as a Harris tweed weaver in Scotland, a friend taught Michael the art of smoking.

“The journey to the Organic Smokehouse wasn’t instant, Michael has done many different things, it just so happens that this vision and business has grown and grown in the past eight years. “A truly international business but with only five employees, all-local, who produce and pack the most delicious product.

“The secret to this amazing product – five tiny little smoke houses, which couldn’t really be described as more than large wardrobes, and a big personality who has made it all happen.”
