LUDLOW chef Will Holland, who took centre stage at last weekend’s Food Festival, is sharing some of his secrets in a new book.

Three Eggs and a Peashoot will bring together some of his favourite recipes but also deals with issues such as how to select the best produce and where it comes from.

It is the first book written by the chef, who runs Le Becasse in Corve Street, although he has often been seen on television including appearances on James Martin’s Saturday Kitchen and with The Hairy Bikers.

Will, pictured above,worked for over a decade in Michelinstarred establishments before taking on the challenge of opening La Bécasse.

He began his career at Homewood Park Hotel, Bath, where he was employed by renowned Chef, Gary Jones who is now Raymond Blanc’s Executive Chef at Le Manoir aux Quat Saisons.

His career has include many accolades including holding a Michelin star from 2009-2011 and his restaurant has regularly featured in various guides as amongst the best in the country.

The book will be published next year and ready for the Ludlow Food Festival in September 2013.
